Chocolate Chip Banana Bread Recipe

Achieve an ultra-moist chocolate chip banana bread with a scoop of sour cream. This one bowl recipe just requires a few ingredients you likely have in your kitchen already. Yield: Makes 1 (9×5-inch) loafPrep time: 10 minutesCook time: 55 minutes to 1 hour Ingredients Cooking spray 4 tablespoons unsalted butter 3 very ripe large bananas 1 large egg 1/2 cup packed dark brown sugar 1/3 cup sour cream 1/4 cup canola oil 1 teaspoon vanilla extract 1 1/2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon kosher salt 3/4 cup semi-sweet chocolate chips, divided Directions Arrange a rack in the middle of the oven and heat the oven to 350°F. Coat a 9×5-inch loaf pan with cooking spray; set aside. Melt 4 tablespoons unsalted butter in the microwave or on the stove. Mash 3 bananas in a large bowl with a fork or potato masher until smooth (1 to 1 1/4 cups mashed banana). Stir in the butter, 1 large egg, 1/2 cup packed dark brown sugar, 1/3 cup sour cream, 1/4 cup canola oil, and 1 teaspoon vanilla extract. Add 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon kosher salt. Stir with a rubber spatula until just incorporated but no dry spots remain. Measure 3/4 cup chocolate chips, then remove and reserve 2 tablespoons for topping. Fold the remaining chocolate chips into the batter. Pour the batter into the prepared pan and spread into an even layer. Sprinkle with the reserved 2 tablespoons chocolate chips.Bake until a toothpick inserted in the center comes out mostly clean, with a few moist crumbs attached, 55 to 60 minutes. Garlic and Herb Marinated Mushrooms

Looking to finish off your pasta, pizza or salad? Add these garlicky marinated mushrooms! The natural umami flavor and herb marinade can be added to any recipe where you enjoy mushrooms. Yield: Serves 2 to 4, makes about 3/12 cups Prep time: 12 minutes Cook time: 10 minutes to 15 minutes Ingredients 1 pound fresh cremini or button mushrooms 3 cloves garlic 1 small shallot 1 small bunch fresh parsley 1 small bunch fresh thyme 6 cups water 1 dried bay leaf 1/4 teaspoon red pepper flakes 1 teaspoon kosher salt, divided, plus more as needed 2 tablespoons white wine vinegar 1/2 teaspoon granulated sugar 1/4 teaspoon freshly ground black pepper, plus more as needed 1/4 cup extra-virgin olive oil 1/2 medium lemon Directions Leave 1 pound cremini or button mushrooms whole if small, but halve or quarter if large. Peel and smash 3 garlic cloves. Peel and finely chop 1 small shallot until you have 2 tablespoons. Pick the leaves from 1 small bunch fresh parsley and coarsely chop until you have 2 tablespoons. Pick the leaves from 1 small bunch fresh thyme and coarsely chop until you have 1 teaspoon. Keep 4 of the remaining fresh thyme sprigs whole and reserve any remaining for another use. Place the garlic, thyme sprigs, 6 cups water, 1 dried bay leaf, 1/4 teaspoon red pepper flakes, and 1/2 teaspoon of the kosher salt in a medium saucepan and bring to a boil over medium-high heat. Add the mushrooms and return to a boil. Continue to boil, stirring occasionally and adjusting heat if needed, until tender, about 3 minutes. Drain the mushrooms and discard the thyme sprigs. Meanwhile, place 2 tablespoons white wine vinegar, 1/2 teaspoon granulated sugar, the remaining 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper in a medium bowl and whisk until the sugar and salt are dissolved. While whisking, slowly add 1/4 cup extra-virgin oil and continue whisking until combined. Finely grate 1/2 teaspoon zest from 1/2 medium lemon. Add the zest, parsley, thyme, and shallots to the dressing and stir to combine. Add warm, drained mushrooms to dressing and toss to coat. Taste and season with more kosher salt and black pepper as needed. Eat immediately or let marinate in an airtight container in the refrigerator for 1 day for more flavor or up to 1 week. Spaghetti Squash Recipe

Although spaghetti squash may look intimidating, all you need is an oven and 30 minutes of your time. You’ll be left with a neutral flavored spaghetti, a perfect companion for marinara, pesto or curry. It’s a great low carb option and an easy way to get more vegetables in meals. Yield: Serves 2 to 4Prep: 10 minutesCook time: 30 minutes to 45 minutes Ingredients 1 medium spaghetti squash (2 to 3 pounds) Directions Preheat the oven to 400°F. Arrange a rack in the middle of the oven and heat the oven to 400°F. Meanwhile, prep the squash. Slice the squash in half. Use a chef’s knife to cut the spaghetti squash lengthwise from stem to tail. Spaghetti squash are really tough and hard, so be cautious and work slowly. You can cradle the squash in a balled-up dish cloth to keep it steady as you cut. Scoop out the seeds. Use a spoon to scrape out the seeds and stringy bits of flesh from inside the squash. Be careful of actually digging into the flesh, though — we want that! The inside should look clean and fairly smooth. Discard the seeds. Place the squash in a roasting pan or baking dish. Place the squash halves cut-side down in a roasting pan or 9×13-inch baking dish. Pour in a little water (optional). Pour a little water in the pan, enough to cover the bottom. Your squash will roast just fine without it, but I find that the water helps the squash steam and become more tender. You can also cover the pan with aluminum foil, if you prefer. Roast the squash for 30 to 45 minutes. Transfer the squash to the oven and roast for 30 to 45 minutes. Smaller squash will cook more quickly than larger squash. Check the squash after 30 minutes to gauge cooking. The squash is done when tender. The squash is ready when you can easily pierce a fork through the flesh all the way to the peel. The flesh will also separate easily into spaghetti-like strands. You can also taste it right now — if the noodles are still a bit crunchy for your taste, put the squash back in the oven for 15 to 20 minutes more. Scrape out the squash. Flip the squash to be cut-side up. Use a fork to gently pull the squash flesh from the peel and to separate the flesh into strands. The strands wrap around the squash horizontally — rake your fork in the same direction as the strands to make the longest “noodles.” Serve the squash. Serve the squash immediately, tossed with a little butter or olive oil if desired. Source: the Kitchn

Prep time: 10 minsTotal time: 10 minsServings: 4 to 6 servingsYield: 4 to 6 cocktails Ingredients Salt, for rimming, optional 8 ounces (1 cup) Blanco tequila 3 ounces (between 1/3 and 1/2 cup) freshly squeezed lime juice from about 2-3 lime 2 ounces (1/4 cup) orange liqueur, like Cointreau 2 ounces (4 cups) orange juice 2 ounces (1/4 cup) simple syrup (or more to taste) 4 cups (20 ounces) frozen mango chunks 2 cups ice Directions Rim the glasses: Pour salt onto a plate that is slightly larger than your cocktail glass. Take a piece of lime and generously rub it around the outside rim of your glass. Dip the outside rim of your glass into the salt. Repeat with other glasses. Blend the margarita: In a blender add in Blanco tequila, freshly squeezed lime juice, orange liqueur, orange juice, simple syrup, frozen mango chunks, and ice cubes.
