Easy Pumpkin Roll Recipe

With Halloween right around the corner, there’s no better time than to bake up a spiced pumpkin cake that tastes just as good as it looks. It’s designed to be flat, which you’ll spread with just the right amount of cream cheese to help hold it in it’s spiral shape. Rolling cake can be intimidating but this recipe has all the essential tips outlined to ensure it’s absolutely foolproof. Yield: Serves 10 to 12Prep time: 1 hourCook time: 30 minutes Ingredients For the cake: 3/4 cup all-purpose flour 1 tablespoon pumpkin pie spice 1 teaspoon baking powder 1/4 teaspoon salt 1 cup granulated sugar 3/4 cup pumpkin purée 3 large eggs 2 teaspoons vanilla extract 1 teaspoon apple cider vinegar For the filling: 4 ounces cream cheese, at room temperature 4 ounces unsalted butter, at room temperature 1/2 cup powdered sugar, plus more for dusting the cake 1 teaspoon vanilla extract Instructions Prepare the baking sheet and heat the oven. Arrange a rack in the middle of the oven and heat to 350°F. To make shaping the cake easier, draw a 10×15-inch rectangle on a sheet of parchment paper. Flip the paper over and use it to line a rimmed baking sheet; set aside. Whisk together dry ingredients. Place the flour, pumpkin pie spice, baking powder, and salt in a medium bowl and whisk to combine. Whisk in the sugar, pumpkin, eggs, and vinegar. Add the sugar, pumpkin, eggs, vanilla, and vinegar, and whisk to combine. Spread the cake into the prepared baking sheet and bake for 25 to 30 minutes. Pour the batter into the prepared baking sheet and spread into an even 10×15-inch rectangle using the template you drew. Bake until the cake springs back when pressed in the center, 25 to 30 minutes. Roll up the cake while still warm. Using the parchment paper, immediately slide the cake onto a large, clean kitchen towel. Working quickly and carefully and starting at a short end, roll the cake and parchment paper up into a tight roll. Use the towel to guide the cake into the roll and to make the cake easier to handle. Wrap the rolled cake completely in the towel. Cool the cake in the towel for 30 minutes. Let the rolled and towel-covered cake cool completely, at least 30 minutes. Meanwhile, make the filling. While the cake cools, make the filling. Place the cream cheese and butter in the bowl of a stand mixer fitted with the paddle attachment. (Alternatively, use an electric hand mixer and large bowl.) Beat on medium-high speed until smooth, about 1 minute. Add the powdered sugar and vanilla and beat on low speed until smooth. Unroll the cake, fill, and reroll. Carefully unroll the cooled cake. Spread the filling over the cake in a thin, even layer, leaving a 1/4-inch border around all sides. Gently reroll the cake, tucking the short end into the frosting and using the parchment to gently ease the cake up over itself and creating a tight roll. Chill and slice. Prep time: 5 minsCook time: 25 minsTotal time: 30 minsServings: 8 cups Ingredients 1/2 gallon fresh, unfiltered apple cider (non-alcoholic) 1 orange 12 whole cloves 4 (3-inch) cinnamon sticks 15 allspice berries 1/4 teaspoon ground nutmeg 7 whole cardamom pods 2 tablespoons unpacked brown sugar Directions Simmer the apple cider with orange and spices: Pour the apple cider into a 3-quart saucepan, cover, turn the heat on medium-high.While the cider is heating up, take a vegetable peeler and peel away a couple thick strips of peel from the orange. Press about half of the cloves into the peeled part of the orange. (You can also just quarter the orange and add the slices and cloves separately)Place orange, orange peel strips, the remaining cloves, and the rest of the ingredients into the sauce pan with the cider. Keep covered and heat the mulled cider mixture to a simmer and reduce heat to low. Simmer for 20 minutes on low heat. Classic Patty Melt Recipe

Try something different this week instead of your usual burger. A patty melt layers caramelized onions, swiss cheese and a perfectly thin burger patty on toasted bread. The caramelized onions make this patty melt. You’ll want to cook them slowly until the sugars breakdown. Add a splash of apple cider vinegar to help brighten the flavor. If you’d rather have an onion-free melt, use some vegetables like mushrooms or peppers instead. Prep time: 10 minsCook time: 40 minsTotal time: 50 minsServings: 2 sandwiches Ingredients 1 sweet yellow onion, thinly sliced 2 tablespoons butter, divided 1 tablespoon apple cider vinegar 8 ounces 90/10 ground beef 1/4 teaspoon salt 1/4 teaspoon black pepper 4 slices sandwich bread 4 slices Swiss cheese Mustard, optional Directions Cook the onions: In a large cast-iron skillet set over medium to medium heat, add 1 tablespoon of butter and sliced onions. Cook onions, stirring occasionally, for about 25 minutes until they are a deep brown color. If the onions are burning on spots, you might need to turn your heat down to medium-low.Near the end of cooking (about 5 minutes), add apple cider vinegar and stir to combine. Then remove from the skillet. Cook the patties: Shape ground beef into two thin 4-ounce patties that are roughly the shape of your bread. Season patties with salt and pepper.When onions are done in your skillet, set the heat to medium-high and add the patties. Cook for 3 minutes per side. If your patties are thin, that should be enough time to cook them through. Remove patties when done. Butter your bread: Wipe your skillet clean and add the last tablespoon of butter to the skillet. Once the butter melts, add all the bread slices to the skillet, so one side of each slice is coated with butter. Remove two of the four pieces of bread and start building your sandwich on the two pieces remaining in the skillet (you can also do this one at a time depending on the size of your skillet). Build your sandwiches in the skillet: On each slice of bread remaining in the skillet, add a slice of Swiss cheese, a patty, half of the caramelized onions, and top with the second slice of Swiss cheese. Top each sandwich with the slice of bread removed from the skillet earlier, buttered side up. Cook the sandwiches: Over medium-low heat, cook the sandwiches for 3-4 minutes per side until the bread is toasted and the cheese is melted. The Best White Wines for Cooking

A white wine is essential to bring balance, fruit and acidity to many recipes. Although grocery stores carry cooking wine, you’ll find even moderately priced white wine expands possibilities and cooking styles. By far one of the best wines to cook with is a dry, crisp white wine. A rich, oaky white can become bitter during the cooking process, while a sweeter white may caramelize or add unwanted sweetness to dishes. If a wine is cooked it will lose almost all the subtle nuances. Therefore if you’re using a high-quality wine it’s best to finish a dish with it instead. Otherwise, use a moderately priced, quaffable white wine and spend the extra money on premium ingredients. Crisp White Wine. An example would be Pinot Grigio, Sauvignon Blanc and Unoaked Chardonnay. These are going to be your go-to’s since there is a moderate alcohol content and generous acidity. A highly alcoholic wine will take longer to reduce and often lack in acidity. Pinot Grigio is the most neutral of the three, making it the most versatile. A Sauvignon Blanc gives more acidity which is perfect for seafood dishes or sauces utilizing heavy cream. Dry Sherry. Sherry is versatile, great for deglazing and bringing depth to a cream sauce. It’s perfect alongside appetizers such as oysters. If you add a dash of Sherry to a soup, you’ll have another layer of depth and dimension with an extra brightness. Dry Marsala. Although classic in a chicken or veal Marsala, you can incorporate this wine in braised preparations. Try adding it to a decadent zabaglione. Sparkling Wine. Perfectly suited for a Champagne vinaigrette or a sorbet. It’s also great as a substitute for dry, white wine in a beurre blanc. The bubbles from the wine will dissipate when cooked, so it’s a great opportunity when you find yourself with any leftover bubbly. Dry Madeira. This Portuguese fortified wine is produced in four distinct styles. A “sercial” dry style doubles as a refreshing aperitif.
