Denver Green Chili Recipe

Ingredients:

  • 2 pounds pork shoulder, cut into bite-sized pieces
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 2 cups chicken or vegetable broth
  • 4 green chilies (such as Hatch or Anaheim), roasted, peeled, and diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust according to spice preference)
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving
  • Tortillas or cooked rice, for serving

Instructions:

  1. Heat a large pot or Dutch oven over medium-high heat. Add the pork shoulder pieces and cook until browned on all sides. Remove the pork from the pot and set it aside.
  2. In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
  3. Return the browned pork to the pot and pour in the chicken or vegetable broth. Stir to combine.
  4. Add the diced green chilies, diced tomatoes (with their juices), ground cumin, dried oregano, smoked paprika, cayenne pepper, salt, and black pepper. Mix well to incorporate all the ingredients.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the chili simmer for about 1.5 to 2 hours, or until the pork is tender and the flavors have melded together.
