Chicken Paprikash Recipe

Ingredients:

  • 2 pounds chicken thighs or drumsticks, bone-in and skin-on
  • 2 tablespoons vegetable oil
  • 2 onions, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons sweet paprika
  • 1 teaspoon caraway seeds
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 tomatoes, diced
  • 2 cups chicken broth
  • 1 cup sour cream
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish
  • Cooked egg noodles or rice, for serving

Instructions:

  1. In a large, deep skillet or Dutch oven, heat the vegetable oil over medium-high heat. Add the chicken pieces, skin-side down, and brown them on all sides. Remove the chicken and set it aside.
  2. In the same skillet, add the finely chopped onions and minced garlic. Sauté until they become soft and translucent.
  3. Stir in the sweet paprika and caraway seeds, coating the onions evenly with the spices.
  4. Return the browned chicken to the skillet. Add the thinly sliced red and green bell peppers and diced tomatoes.
  5. Pour in the chicken broth and bring the mixture to a boil.
  6. Reduce the heat to low, cover the skillet, and let the Chicken Paprikash simmer for about 30-35 minutes, or until the chicken is cooked through and tender.
  7. Remove the skillet from heat. Carefully ladle some of the hot sauce into a bowl containing the sour cream and stir to temper the sour cream.
  8. Gradually whisk the tempered sour cream mixture back into the skillet with the chicken and sauce.
  9. Season the Chicken Paprikash with salt and black pepper to taste. Adjust the seasoning as needed.
  10. Serve the savory Hungarian Chicken Paprikash hot, garnished with chopped fresh parsley, alongside cooked egg noodles or rice.
