Ingredients:

For the Dumpling Dough:

  • 2 cups all-purpose flour
  • 2/3 cup water
  • 1 egg
  • 1/2 teaspoon salt
For the Filling:
  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1 small onion, finely chopped
  • Salt and black pepper, to taste
For Serving:
  • Sour cream or melted butter
  • Chopped fresh dill or parsley (optional)

Instructions:

  1. In a large mixing bowl, combine the flour, water, egg, and salt to create the dumpling dough. Knead the dough until it becomes smooth and elastic. Cover it with a clean kitchen towel and let it rest for about 30 minutes.
  2. In another bowl, mix together the ground beef, ground pork, finely chopped onion, salt, and black pepper to create the filling.
  3. Roll out the rested dough on a floured surface until it is very thin, about 1/16 of an inch thick.
  4. Use a round cookie cutter or a glass to cut out circles from the rolled dough.
  5. Place a small amount of the meat filling in the center of each dough circle.
  6. Fold the dough over the filling to create a half-moon shape and press the edges together to seal, forming dumplings.
  7. Bring a large pot of salted water to a boil.
  8. Carefully drop the dumplings into the boiling water and cook for about 5-7 minutes, or until they float to the surface. Cook for an additional 2-3 minutes after they’ve surfaced.
  9. Using a slotted spoon, remove the cooked Pelmeni from the water and place them in a serving dish.
  10. Serve the hot Pelmeni dumplings with sour cream or melted butter, and garnish with chopped fresh dill or parsley if desired.
