Groundnut Soup

Ingredients:
For the Groundnut Soup:
- 1 whole chicken, cut into pieces (you can also use beef, goat, or fish)
- 1 cup roasted peanuts, ground into a paste
- 2 large onions, finely chopped
- 3 tomatoes, blended into a puree
- 1/2 cup palm oil
- 1/2 cup ground crayfish (dried shrimp)
- 1 teaspoon ground ginger
- 1 teaspoon ground garlic
- 2-3 Scotch bonnet or habanero peppers, blended (adjust to your spice preference)
- 1 bunch of spinach or collard greens, chopped
- Salt and pepper to taste
- 2-3 cups water or chicken broth
Instructions:
- In a large pot, heat the palm oil over medium heat.
- Add the finely chopped onions and sauté until they become translucent.
- Add the chicken pieces (or your choice of meat) and brown them on all sides.
- Stir in the ground ginger, ground garlic, and ground crayfish.
- Pour in the tomato puree and continue to cook for a few minutes.
- Add the ground peanut paste and stir well to combine.
- Pour in the water or chicken broth and bring the mixture to a simmer.
- Let the soup cook for about 20-30 minutes, or until the meat is tender and fully cooked.
- Add the blended Scotch bonnet peppers and salt and pepper to taste. Adjust the spice level to your preference.
- Stir in the chopped spinach or collard greens and cook until they wilt.
- Taste and adjust the seasonings as needed.
- Serve the Groundnut Soup hot, traditionally with fufu, rice, or your favorite starch.
