Chinese Jianbing
Jianbing is a savory Chinese crepe made from a thin layer of batter spread onto a hot griddle, topped with a variety of fillings, and folded into a portable snack.
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup rice flour
- 1 1/2 cups water
- 2 eggs
- 1/4 cup chopped scallions
- 1/4 cup chopped cilantro
- 2 tablespoons vegetable oil, divided
- 4 sheets of crispy fried wonton skin (optional)
- Hoisin sauce or sweet bean sauce
- Chili sauce or sriracha (optional)
- Soy sauce
- Sesame oil
Instructions:
- In a large mixing bowl, whisk together the all-purpose flour, rice flour, and water until a smooth batter forms. Let the batter rest for 10-15 minutes.
- Heat a non-stick skillet or crepe pan over medium heat and lightly grease the surface with a small amount of vegetable oil.
- Pour a ladleful of batter onto the skillet and quickly spread it out into a thin, even circle using the back of the ladle. Cook for 1-2 minutes until the bottom is golden brown and crispy.
- Crack an egg onto the surface of the crepe and quickly spread it out using a spatula. Sprinkle chopped scallions and cilantro over the egg.
- If using, place a sheet of crispy fried wonton skin on top of the egg mixture.
- Drizzle hoisin sauce or sweet bean sauce over the egg mixture, followed by a drizzle of chili sauce or sriracha if desired. Drizzle soy sauce and sesame oil over the filling.
- Using a spatula, fold one side of the crepe over the filling, then fold the opposite side over to enclose the filling, creating a rectangular shape.
- Transfer the Jianbing to a serving plate, seam side down, and slice it in half. Serve hot and enjoy this flavorful Chinese street food delicacy!
