Classic Beef Bourguignon Recipe

If you’re looking for a classic French dish that’s hearty, flavorful, and perfect for a cozy night in, then look no further than this beef bourguignon recipe. With tender pieces of beef, savory bacon, and a rich red wine sauce, this dish is a comfort food staple in many European households.

Ingredients:

  • 2 pounds beef chuck roast, cut into 2-inch pieces
  • 4 slices of bacon, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh thyme leaves
  • 2 bay leaves
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 350°F.
  2. In a large dutch oven or oven-safe pot, cook the bacon over medium heat until crisp.
  3. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
  4. Add the chopped onions and garlic to the pot and sauté until softened.
  5. Add the beef chunks to the pot and cook until browned on all sides.
  6. Add the red wine, beef broth, tomato paste, thyme, and bay leaves to the pot and stir to combine.
  7. Bring the mixture to a simmer and cover the pot with a lid.
  8. Transfer the pot to the preheated oven and cook for 2-3 hours or until the beef is tender and the sauce has thickened.
  9. In a separate small pan, melt the butter over medium heat and whisk in the flour to create a roux.
  10. Gradually add the roux to the pot, stirring constantly until the sauce has thickened even more.
  11. Season with salt and pepper to taste.
  12. Serve hot with crusty bread or mashed potatoes.
