Ingredients:

  • 4 fillets of your preferred fish (such as salmon, trout, tilapia, or sea bass)
  • 2 lemons, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh chives, chopped
  • 1/4 cup olive oil
  • Salt and pepper to taste

Procedure:

  1. Preheat your grill to medium-high heat, and lightly oil the grates to prevent the fish from sticking.
  2. In a small bowl, whisk together the olive oil, minced garlic, chopped parsley, dill, and chives. Season the mixture with salt and pepper to taste.
  3. Lay out four sheets of aluminum foil, each large enough to wrap around one fish fillet. Place a lemon slice in the center of each foil sheet, then lay a fish fillet on top of the lemon slice.
  4. Brush the fish fillets generously with the herb-infused olive oil mixture, making sure to coat both sides evenly.
  5. Top each fillet with additional lemon slices and a sprinkle of freshly ground black pepper.
  6. Carefully fold the sides of the foil up and over the fish to create a sealed packet, ensuring that there are no openings for the juices to escape.
  7. Place the foil packets on the preheated grill, cover, and cook for 10-12 minutes, or until the fish is cooked through and flakes easily with a fork. Cooking time will vary depending on the thickness of the fish fillets, so be sure to check for doneness periodically.
  8. Once the fish is cooked, carefully remove the foil packets from the grill using tongs or a spatula. Be cautious, as the packets will be hot.
  9. Carefully open the foil packets, and transfer the fish fillets to a serving platter. Serve immediately, garnished with additional fresh herbs and lemon wedges if desired. Enjoy your Lemon Herb Grilled Fish with your favorite summer sides, such as grilled vegetables, couscous, or a crisp salad. This light and flavorful dish is perfect for al fresco dining and will surely become a staple in your summer grilling repertoire. So fire up the grill, and savor the taste of summer with this easy and delicious recipe!
