Patacones, also known as tostones in some Latin American countries, are twice-fried green plantains that are smashed, fried again, and served with a variety of mouthwatering toppings.
Ingredients:
- 2 green plantains, peeled and sliced into 1-inch thick rounds
- Vegetable oil, for frying
- Salt, to taste
- Toppings of your choice (guacamole, shredded beef, black beans, cheese, salsa, etc.)
Instructions:
- Heat vegetable oil in a deep frying pan over medium-high heat.
- Add the plantain rounds to the hot oil and fry for about 3-4 minutes, or until they are golden brown and slightly softened.
- Remove the fried plantain rounds from the oil and place them on a paper towel-lined plate to drain excess oil.
- Using a tostonera (plantain press) or the bottom of a heavy glass, flatten each fried plantain round into a disk.
- Return the flattened plantains to the hot oil and fry for an additional 2-3 minutes, or until they are crispy and golden brown.
- Remove the fried plantains from the oil and place them on a paper towel-lined plate to drain excess oil.
- Sprinkle the hot Patacones with salt to taste.
- Serve the Patacones hot with your choice of toppings, such as guacamole, shredded beef, black beans, cheese, salsa, or any other desired toppings.
