Pav Bhaji Recipe
Pav Bhaji recipe featuring a spicy and tangy vegetable mash served with buttered pav (bread rolls)
Ingredients:
- 4 medium potatoes, boiled and mashed
- 1 cup cauliflower florets, boiled and mashed
- 1 cup green peas, boiled
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, finely chopped
- 1 capsicum (bell pepper), finely chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 tablespoons pav bhaji masala
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons butter
- Fresh coriander leaves, chopped
- 8 pav (bread rolls), lightly toasted
- Lemon wedges, for serving
Instructions:
- In a large pan, heat butter over medium heat. Add chopped onions, green chilies, minced garlic, and grated ginger. Saute until onions turn translucent.
- Add chopped tomatoes to the pan and cook until they turn soft and mushy.
- Add chopped capsicum to the pan and sauté for a few minutes until it softens.
- Stir in pav bhaji masala, red chili powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes.
- Add boiled and mashed potatoes, cauliflower, and green peas to the pan. Mix everything together until well combined.
- Using a potato masher, mash the vegetables while stirring continuously, until you get a thick and uniform mixture.
- Add a little water if the bhaji is too dry and continue cooking for 5-7 minutes until the flavors are well blended.
- Garnish the Pav Bhaji with freshly chopped coriander leaves and a dollop of butter.
