Ingredients:
For the Dumpling Dough:
- 2 cups all-purpose flour
- 2/3 cup water
- 1 egg
- 1/2 teaspoon salt
For the Filling:
- 1/2 pound ground beef
- 1/2 pound ground pork
- 1 small onion, finely chopped
- Salt and black pepper, to taste
For Serving:
- Sour cream or melted butter
- Chopped fresh dill or parsley (optional)
Instructions:
- In a large mixing bowl, combine the flour, water, egg, and salt to create the dumpling dough. Knead the dough until it becomes smooth and elastic. Cover it with a clean kitchen towel and let it rest for about 30 minutes.
- In another bowl, mix together the ground beef, ground pork, finely chopped onion, salt, and black pepper to create the filling.
- Roll out the rested dough on a floured surface until it is very thin, about 1/16 of an inch thick.
- Use a round cookie cutter or a glass to cut out circles from the rolled dough.
- Place a small amount of the meat filling in the center of each dough circle.
- Fold the dough over the filling to create a half-moon shape and press the edges together to seal, forming dumplings.
- Bring a large pot of salted water to a boil.
- Carefully drop the dumplings into the boiling water and cook for about 5-7 minutes, or until they float to the surface. Cook for an additional 2-3 minutes after they’ve surfaced.
- Using a slotted spoon, remove the cooked Pelmeni from the water and place them in a serving dish.
- Serve the hot Pelmeni dumplings with sour cream or melted butter, and garnish with chopped fresh dill or parsley if desired.
