Egyptian Koshari Recipe

Egyptian cuisine is an explosion of flavors, influenced by the country’s history and cultural diversity. One of the most popular dishes of Egypt is the Koshari, a hearty and flavorful dish made with a blend of rice, lentils, macaroni, and a spicy tomato sauce. This dish is a perfect representation of the country’s cuisine, with a mix of textures and flavors that are sure to satisfy your cravings.

Ingredients:

  • 1 cup rice
  • 1 cup lentils
  • 1 cup macaroni
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 2 cups canned chopped tomatoes
  • 1 tablespoon white vinegar
  • 1/2 cup chickpeas, drained and rinsed

Instructions:

  1. Rinse the lentils and place them in a pot with 2 cups of water. Bring to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the lentils are tender.
  2. Rinse the rice and place it in a pot with 2 cups of water. Bring to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until the rice is tender.
  3. Cook the macaroni according to the package instructions.
  4. In a pan, heat up the olive oil and sauté the onions until they become translucent. Add the garlic and cook for another minute.
  5. Add the tomato sauce, cumin, salt, and black pepper. Let it simmer for 10-15 minutes, or until the sauce thickens.
  6. To serve, place the cooked rice, lentils, and macaroni in a bowl. Top it with the tomato sauce and fried onions.
