Hindi Kadai Chicken Recipe

Ingredients:

  • 500 grams chicken, cut into pieces
  • 2 medium onions, finely chopped
  • 2 tomatoes, pureed
  • 1 green bell pepper, cut into cubes
  • 1 red bell pepper, cut into cubes
  • 2 green chilies, slit lengthwise
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds, crushed
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon dried fenugreek leaves (kasuri methi)
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves for garnishing

Instructions:

  1. Heat oil in a kadai or deep skillet over medium heat. Add the cumin seeds and let them splutter.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Add the ginger-garlic paste and green chilies. Cook for a minute until the raw aroma disappears.
  4. Add the tomato puree and cook until the oil separates from the mixture.
  5. Now, add the crushed coriander seeds, red chili powder, turmeric powder, and salt. Mix well and cook for a couple of minutes.
  6. Add the chicken pieces to the kadai and stir well to coat them with the masala.
  7. Cover the kadai and cook on low heat for about 15-20 minutes, or until the chicken is cooked through and tender.
  8. Add the bell peppers and cook for an additional 5 minutes, allowing them to soften slightly.
  9. Sprinkle garam masala and dried fenugreek leaves over the chicken. Give it a final stir.
  10. Garnish with fresh coriander leaves.
  11. Serve the delicious Kadai Chicken hot with naan, roti, or steamed rice.
