Ingredients:

  • 12 quahogs (large hard-shell clams)
  • 1 cup reserved quahog juice
  • 1/2 cup finely chopped clam meat
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons melted butter
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • Lemon wedges, for serving

Instructions:

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with aluminum foil.
  2. Scrub the quahogs to remove any dirt or debris. Place them in a large pot and add enough water to cover them. Bring to a boil and cook until the quahog shells open, about 8-10 minutes. Discard any quahogs that do not open.
  3. Remove the quahogs from the pot and let them cool. Reserve 1 cup of the quahog juice.
  4. Once the quahogs are cool enough to handle, remove the clam meat from the shells and finely chop it.
  5. In a mixing bowl, combine the chopped clam meat, breadcrumbs, finely chopped onion, chopped parsley, melted butter, lemon juice, Worcestershire sauce, dried thyme, salt, and black pepper. Mix well to combine all the ingredients.
  6. Add the reserved quahog juice gradually to the mixture, stirring until you achieve a moist but firm stuffing consistency.
  7. Spoon the stuffing mixture into the quahog shells, packing it tightly.
  8. Place the stuffed quahogs on the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until the tops are golden brown.
  9. Remove the Stuffed Quahogs from the oven and let them cool for a few minutes.
  10. Serve the Stuffed Quahogs with lemon wedges on the side, allowing the bright citrus flavor to complement the rich seafood stuffing.
  11. Get ready to experience the true flavors of Rhode Island with each bite of these Stuffed Quahogs. The combination of tender quahogs and flavorful stuffing is a culinary delight that will transport you to the shores of the Ocean State. Enjoy the authentic taste of Rhode Island and savor the essence of its coastal cuisine.
