Ingredients:

  • 2 pounds beef chuck, cut into bite-sized cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 jalapeño peppers, seeded and finely chopped
  • 2 cans (14.5 ounces each) diced tomatoes
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños

Instructions:

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  2. Add the beef cubes to the pot and brown them on all sides. Remove the beef from the pot and set it aside.
  3. In the same pot, add the chopped onion, minced garlic, bell pepper, and jalapeño peppers. Sauté until the vegetables are softened and fragrant.
  4. Return the browned beef to the pot, along with the diced tomatoes (with their juices), beef broth, chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Stir well to combine.
  5. Bring the chili to a boil, then reduce the heat to low. Cover the pot and let it simmer for 2 to 3 hours, or until the beef is tender and the flavors have melded together.
  6. Adjust the seasoning with salt and pepper to taste.
  7. Serve the Texas-Style Chili Con Carne hot, garnished with your favorite toppings such as shredded cheese, sour cream, chopped cilantro, and sliced jalapeños.
