Ingredients:

  • 500 grams lamb leg or shoulder, cut into 1-inch cubes
  • 1 large onion, grated
  • 3 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground sumac
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (adjust to your preferred level of spiciness)
  • Salt, to taste
  • Black pepper, to taste
  • Wooden or metal skewers
  • Grilled vegetables and flatbread, for serving

Instructions:

  1. In a large bowl, combine the grated onion, minced garlic, tomato paste, olive oil, ground cumin, ground sumac, smoked paprika, red pepper flakes, salt, and black pepper.
  2. Add the cubed lamb to the marinade and toss until the meat is evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling.
  4. Preheat your grill to medium-high heat.
  5. Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece for even cooking.
  6. Place the kebabs on the preheated grill and cook for about 8-10 minutes, turning occasionally, until the lamb is cooked to your desired level of doneness and develops a beautiful char.
  7. Once the Turkish Lamb Kebabs are cooked, remove them from the grill and let them rest for a few minutes.
  8. Serve the kebabs with grilled vegetables and flatbread, offering a taste of Turkish street food right at your table.
