Turkish Lamb Kebabs Recipe

  • 500 grams lamb leg or shoulder, cut into 1-inch cubes
  • 1 large onion, grated
  • 3 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground sumac
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (adjust to your preferred level of spiciness)
  • Salt, to taste
  • Black pepper, to taste
  • Wooden or metal skewers
  • Grilled vegetables and flatbread, for serving


  1. In a large bowl, combine the grated onion, minced garlic, tomato paste, olive oil, ground cumin, ground sumac, smoked paprika, red pepper flakes, salt, and black pepper.
  2. Add the cubed lamb to the marinade and toss until the meat is evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling.
