African Peanut Stew Recipe

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 1 large sweet potato, peeled and diced
  • 1 can diced tomatoes
  • 1/2 cup creamy peanut butter
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions:

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger to the pot and sauté until the onions are softened and fragrant.
  3. Add the tomato paste, ground cumin, smoked paprika, and cayenne pepper to the pot and stir to combine with the onion mixture.
  4. Pour the vegetable broth into the pot and stir to combine with the spice mixture.
  5. Add the diced sweet potato and canned tomatoes to the pot and bring the mixture to a simmer.
  6. Cover the pot and let the stew simmer for about 20-25 minutes, or until the sweet potatoes are tender.
  7. Add the creamy peanut butter to the pot and stir until it is melted and combined with the stew.
  8. Season with salt and pepper to taste.
