Ingredients:
- 2 lbs. pork shoulder, trimmed of excess fat
- 1 tbsp. olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup ketchup
- 1/4 cup brown sugar
- 1/4 cup apple cider vinegar
- 2 tbsp. Worcestershire sauce
- 1 tbsp. Dijon mustard
- 1 tsp. smoked paprika
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 tsp. cayenne pepper
- 8 buns, toasted
Instructions:
- Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
- Add the pork shoulder and sear on all sides until browned, about 5-6 minutes.
- Add the onion and garlic to the pot and sauté for 2-3 minutes or until the onion is soft.
- In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, Dijon mustard, smoked paprika, salt, black pepper, and cayenne pepper.
- Pour the sauce over the pork and onions, making sure to coat everything evenly.
- Cover the pot with a lid and cook on low heat for 6-8 hours, or until the pork is tender and easily shreds with a fork.
- Shred the pork using two forks and mix with the sauce until well coated.
- Serve the pulled pork on toasted buns.
