Ingredients:

  • 1 ½ pounds beef fillet, trimmed
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons Dijon mustard
  • 8 ounces cremini mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 2 sprigs fresh thyme, leaves only
  • 1 sheet puff pastry, thawed if frozen
  • 1 egg, beaten (for egg wash)
  • Flour, for dusting

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Season the beef fillet with salt and black pepper on all sides.
  3. Heat olive oil in a skillet over high heat. Sear the beef fillet on all sides until it is browned. Remove from heat and let it cool.
  4. Spread a thin layer of Dijon mustard over the cooled beef fillet.
  5. In the same skillet, add the finely chopped mushrooms, minced garlic, and fresh thyme leaves. Cook until the mushrooms release their moisture and turn golden brown. Remove from heat and let it cool.
  6. On a lightly floured surface, roll out the puff pastry to a rectangular shape, large enough to completely wrap the beef fillet.
  7. Spread the mushroom mixture evenly over the puff pastry, leaving a border around the edges.
  8. Place the seasoned beef fillet on top of the mushroom mixture.
  9. Carefully wrap the puff pastry around the beef, sealing all edges. Trim any excess pastry if needed.
  10. Brush the beaten egg wash over the pastry to create a glossy finish.
  11. Place the wrapped Beef Wellington on a baking sheet lined with parchment paper.
  12. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crispy.
  13. Remove from the oven and let it rest for 10 minutes before slicing.
  14. Serve the Beef Wellington in thick slices, revealing the beautiful layers of beef, mushroom, and pastry.
  15. Accompany with your favorite sauce, such as red wine reduction or creamy peppercorn sauce, and garnish with fresh herbs.
