Chicken Fuchka Recipe

Chicken Fuchka Recipe also known as Puchka or Golgappa in other regions, is a popular street snack. These crispy, hollow spheres are filled with a spicy and tangy mixture of seasoned chicken, potatoes, onions, and tamarind chutney, creating an explosion of flavors in every bite.

Ingredients:

For the Fuchka Shells:
  • Semolina (sooji): 1 cup
  • All-purpose flour: 1 cup
  • Baking powder: 1/2 teaspoon
  • Salt: 1/2 teaspoon
  • Water: As needed
For the Chicken Filling:
  • Boneless chicken, cooked and shredded: 1 cup
  • Potatoes, boiled and mashed: 1/2 cup
  • Onion, finely chopped: 1/4 cup
  • Green chili, finely chopped: 1 tablespoon
  • Fresh coriander leaves, chopped: 2 tablespoons
  • Tamarind chutney: 1/4 cup
  • Chaat masala: 1 teaspoon
  • Red chili powder: 1/2 teaspoon
  • Salt to taste
For Serving:
  • Tamarind chutney
  • Chopped fresh coriander leaves
  • Finely chopped onions

Instructions:

  1. To make the Fuchka shells, combine semolina, all-purpose flour, baking powder, and salt in a bowl. Gradually add water to form a stiff dough. Cover and let it rest for 20-30 minutes.
  2. Divide the dough into small balls and roll them out into thin circles.
  3. Heat oil in a deep frying pan over medium heat. Fry the rolled-out dough circles until they puff up and turn golden brown. Remove and drain excess oil on paper towels. Set aside.
  4. In a mixing bowl, combine the shredded chicken, mashed potatoes, chopped onion, green chili, coriander leaves, tamarind chutney, chaat masala, red chili powder, and salt. Mix well to combine.
  5. To assemble the Chicken Fuchka, gently break a hole in the top of each fried dough shell to create a cavity.
  6. Fill each cavity with a spoonful of the chicken filling mixture.
  7. Drizzle additional tamarind chutney on top and garnish with chopped coriander leaves and onions.
  8. Serve immediately and enjoy the spicy and flavorful Chicken Fuchka as a delicious street food snack!
