  • 1 cup freshly grated coconut (unsweetened)
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 1 small red onion, finely chopped
  • 1-2 cloves garlic, minced
  • 1 small tomato, finely chopped
  • 1/2 teaspoon roasted curry powder
  • 1/2 teaspoon chili powder (adjust to taste)
  • Juice of 1 lime
  • Salt, to taste
  • Fresh curry leaves (optional, for garnish)

  1. In a mixing bowl, combine the freshly grated coconut, finely chopped green chilies, minced garlic, and finely chopped red onion.
  2. Add the roasted curry powder and chili powder to the bowl. These spices will infuse the sambol with a rich, aromatic flavor.
  3. Squeeze the juice of one lime into the mixture. Lime adds a zesty kick to the sambol.
  4. Season with salt to taste and give everything a good stir. Adjust the chili and salt levels according to your preference.
  5. Gently fold in the finely chopped tomato. This adds a juicy, refreshing element to the sambol.
  6. If available, garnish with fresh curry leaves for an extra burst of flavor.
  7. Allow the flavors to meld together by letting the sambol sit for about 15-20 minutes before serving.
