Indonesian Rendang Recipe

Ingredients:
- 1 kg beef (preferably chuck roast), cut into bite-sized cubes
- 4 shallots, finely chopped
- 4 cloves of garlic, minced
- 2 stalks lemongrass, bruised
- 4 kaffir lime leaves, torn into pieces
- 2 cinnamon sticks
- 4 cardamom pods
- 4 cloves
- 400 ml coconut milk
- 200 ml water
- 3 tablespoons vegetable oil
- Salt, to taste
Instructions:
- Heat the vegetable oil in a large pot over medium heat. Add the shallots and garlic, and sauté until fragrant and golden brown.
- Add the beef to the pot and cook until it turns brown on all sides.
- Stir in the lemongrass, kaffir lime leaves, cinnamon sticks, cardamom pods, and cloves. Continue cooking for a couple of minutes to release their aromas.
- Pour in the coconut milk and water. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for at least 2 hours, or until the meat is tender and the sauce has thickened. Stir occasionally to prevent sticking.
