- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon ground cardamom
- Pinch of salt
- 2 tablespoons butter, melted
- 1/2 cup coconut milk (or regular milk)
- Vegetable oil, for frying
- In a mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, ground cardamom, and a pinch of salt.
- Pour in the melted butter and coconut milk (or regular milk). Mix well until a soft, slightly sticky dough forms.
- Knead the dough on a lightly floured surface for a few minutes until it becomes smooth.
- Cover the dough with a clean kitchen towel and let it rest for about 20-30 minutes.
- After resting, divide the dough into small equal portions and shape them into balls.
- Roll out each ball into a circle, about 1/4 inch thick.
- Heat vegetable oil in a deep pan over medium heat. The oil should be about 2 inches deep.
- Carefully place the rolled-out dough circles into the hot oil, frying them until they turn golden brown on both sides. Use a slotted spoon to flip and remove them from the oil.
- Place the fried Mandazis on a plate lined with paper towels to absorb any excess oil.
