Ingredients:

  • 1 cup wild rice
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced carrot
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Chopped fresh parsley, for garnish

Instructions:

  1. In a fine-mesh sieve, rinse the wild rice under cold water until the water runs clear.
  2. In a large pot, melt the butter over medium heat. Add the onion, celery, carrot, and garlic, and sauté until the vegetables are tender.
  3. Add the rinsed wild rice, chicken broth, bay leaf, and dried thyme to the pot. Bring to a boil, then reduce the heat and simmer for 40-45 minutes, or until the wild rice is tender.
  4. In a small bowl, whisk together the heavy cream and flour until well combined.
  5. Stir the cooked chicken into the pot and then pour in the cream mixture, stirring continuously to prevent lumps. Simmer for an additional 10 minutes, or until the soup thickens slightly.
  6. Season with salt and black pepper to taste.
  7. Remove the bay leaf from the soup before serving.
  8. Ladle the Minnesota Wild Rice Soup into bowls, garnish with chopped fresh parsley, and serve hot.
