Ingredients:

  • 3 cloves garlic
  • 2 shallots
  • 1 teaspoon belacan (shrimp paste), toasted
  • 1 tablespoon tamarind paste
  • 1 tablespoon palm sugar or brown sugar
  • Salt, to taste
For Serving:
  • Hard-boiled or fried eggs
  • Crispy fried anchovies
  • Roasted peanuts
  • Fresh cucumber slices
  • Fresh or dried banana leaves, for serving

Instructions:

For the Coconut Rice:
  1. Rinse the jasmine rice thoroughly until the water runs clear. Drain the rice well.
  2. In a rice cooker or a pot, combine the rinsed rice, coconut milk, water, pandan leaf (if using), and a pinch of salt.
  3. Cook the rice according to your rice cooker’s instructions or on the stovetop until the liquid is absorbed and the rice is fluffy. Once cooked, fluff the rice gently with a fork to separate the grains.
