Quinoa Stuffed Avocados Recipe

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 4 ripe avocados, halved and pitted
  • 1 red bell pepper, diced
  • 1 cup black beans, cooked
  • 1 cup corn kernels, cooked
  • 1 red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 lime, juiced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. Prepare Quinoa:
    1. In a pot, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer until quinoa is cooked and water is absorbed.
    2. Fluff the quinoa with a fork and let it cool.
  2. Prepare Avocados:
    1. Scoop a small portion of the avocado flesh from each half, creating a well for the quinoa stuffing. Dice the scooped avocado and set aside.
  3. Prepare Quinoa Filling:
    1. In a bowl, mix the cooked quinoa, diced red bell pepper, black beans, corn, chopped red onion, and diced avocado.
    2. Drizzle olive oil and lime juice over the mixture. Sprinkle cumin, salt, and pepper. Toss gently to combine.
  4. Assemble:
    1. Spoon the quinoa filling into the avocado halves, creating a generous mound.
    2. Garnish with fresh cilantro and a squeeze of lime juice.
