  • 2 tablespoons tomato paste

  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Olive oil, for cooking
For the mashed potatoes:
  • 4 large potatoes, peeled and diced
  • 4 tablespoons butter
  • 1/4 cup milk
  • Salt and pepper, to taste

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, and sauté until onions become translucent.
  2. Add ground lamb or beef to the skillet and cook until browned. Drain excess fat if necessary.
  3. Stir in diced carrots, frozen peas, tomato paste, Worcestershire sauce, dried thyme, and salt and pepper. Cook for a few minutes until the vegetables are tender.
  4. Pour in the beef or vegetable broth and simmer the mixture until it thickens. Remove from heat and set aside.
  5. In a separate pot, boil diced potatoes until tender. Drain and mash the potatoes with butter, milk, salt, and pepper until smooth and creamy.
  6. Preheat the oven to 400°F (200°C).
  7. Transfer the meat filling to a baking dish and spread it evenly.
  8. Spoon the mashed potatoes over the meat filling, smoothing the top with a fork.
  9. Place the baking dish in the preheated oven and bake for about 20-25 minutes, until the mashed potatoes develop a golden crust.
  10. Remove from the oven and let the Shepherd’s Pie cool slightly before serving.
