Ingredients:

For the Teriyaki Marinade:
  • 4 salmon fillets
  • 1/4 cup soy sauce
  • 2 tablespoons mirin (sweet rice wine)
  • 2 tablespoons sake (Japanese rice wine)
  • 1 tablespoon sugar
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon vegetable oil
For the Sesame Ginger Glaze:
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon sesame seeds
  • Sliced green onions, for garnish (optional)

Instructions:

  1. In a bowl, combine the soy sauce, mirin, sake, sugar, minced garlic, and grated ginger to create the teriyaki marinade.
  2. Place the salmon fillets in a shallow dish and pour the teriyaki marinade over them. Let the salmon marinate for 15-30 minutes.
  3. In a small bowl, whisk together the ingredients for the sesame ginger glaze: sesame oil, soy sauce, rice vinegar, grated ginger, and sesame seeds. Set it aside.
  4. Preheat your grill or a skillet to medium-high heat.
  5. Brush the grill grates or skillet with vegetable oil to prevent sticking.
  6. Remove the salmon from the marinade and grill it for about 3-4 minutes per side, or until it’s cooked to your preferred level of doneness.
  7. During the last minute of cooking, brush the salmon with some of the sesame ginger glaze.
  8. Remove the salmon from the grill and drizzle with more of the glaze.
  9. Garnish with sliced green onions, if desired.
