Stuffed Squash Recipe

This delicious stuffed squash recipe combines sweet and savory flavors in a unique way. The combination of caramelized onions, apples, and spices stuffed inside tender roasted squash makes for a comforting and flavorful meal. It’s perfect for a cozy night in or a special dinner with friends. Plus, it’s a great way to use up any extra squash you may have on hand.

Ingredients:

  • 2 medium-sized squash (such as acorn or kabocha)
  • 1 large onion, chopped
  • 1 apple, chopped
  • 1/4 cup chopped walnuts
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 2 tbsp. olive oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the squash in half and scoop out the seeds.
  3. Place the squash halves cut-side up on a baking sheet.
  4. Drizzle with olive oil and sprinkle with salt and pepper.
  5. Roast the squash in the preheated oven for 30-40 minutes or until tender.
  6. While the squash is roasting, heat the olive oil in a pan over medium-high heat.
  7. Add the chopped onion and cook until caramelized, stirring occasionally.
  8. Add the chopped apple, walnuts, cinnamon, nutmeg, salt, and pepper to the pan and cook for an additional 5-10 minutes or until the apple is soft.
  9. Once the squash is done roasting, stuff each half with the apple and onion mixture.
  10. Return the stuffed squash to the oven and bake for an additional 10-15 minutes or until heated through.
