Spicy Arabic Shakshuka Recipe

Ingredients:

  • 4 eggs
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can diced tomatoes
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Heat a large skillet over medium heat and add some olive oil.
  2. Add the chopped onion and garlic and sauté until the onion becomes translucent.
  3. Add the diced red and green bell peppers and continue cooking for about 5 minutes or until they soften.
  4. Add the can of diced tomatoes, paprika, cumin, chili powder, salt, and pepper. Stir well and let the mixture simmer for about 10-15 minutes.
  5. Use a spoon to make four small wells in the tomato mixture and crack an egg into each well.
  6. Cover the skillet with a lid and let the eggs cook for about 5-7 minutes or until the egg whites are set and the yolks are still runny.
  7. Remove the skillet from the heat, garnish with fresh parsley and serve hot with some crusty bread or pita bread.
