Ukrainian Varenyky Recipe
Ukrainian cuisine is known for its delicious and hearty dishes, and varenyky is no exception. These stuffed dumplings are a staple in Ukrainian households, and every family has their own recipe. This traditional varenyky recipe features a savory filling of mashed potatoes and cheese, wrapped in a tender dough and boiled to perfection.
Ingredients:
- 3 cups all-purpose flour
- 1 cup warm water
- 1 large egg
- 1 tsp salt
- 2 cups mashed potatoes
- 1 cup grated cheddar cheese
- 1/2 cup diced onion
- 3 tbsp butter
- Salt and pepper to taste
Instructions:
- In a large mixing bowl, combine flour, egg, salt, and warm water. Mix until a dough forms, then knead for 5-10 minutes until smooth.
- Cover the dough and let it rest for 30 minutes.
- In a separate mixing bowl, combine mashed potatoes, grated cheese, diced onion, and salt and pepper to taste. Mix well.
- Roll out the dough to a thickness of 1/8 inch and cut into circles using a cookie cutter or a glass.
- Place a spoonful of the potato-cheese filling onto each dough circle and fold in half, pressing the edges to seal.
- Bring a pot of salted water to a boil. Add the varenyky and cook for 5-7 minutes or until they float to the surface.
- Drain the varenyky and toss with butter. Serve hot.
