Ukrainian Varenyky Recipe

Ukrainian cuisine is known for its delicious and hearty dishes, and varenyky is no exception. These stuffed dumplings are a staple in Ukrainian households, and every family has their own recipe. This traditional varenyky recipe features a savory filling of mashed potatoes and cheese, wrapped in a tender dough and boiled to perfection.

Ingredients:

  • 3 cups all-purpose flour
  • 1 cup warm water
  • 1 large egg
  • 1 tsp salt
  • 2 cups mashed potatoes
  • 1 cup grated cheddar cheese
  • 1/2 cup diced onion
  • 3 tbsp butter
  • Salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine flour, egg, salt, and warm water. Mix until a dough forms, then knead for 5-10 minutes until smooth.
  2. Cover the dough and let it rest for 30 minutes.
  3. In a separate mixing bowl, combine mashed potatoes, grated cheese, diced onion, and salt and pepper to taste. Mix well.
  4. Roll out the dough to a thickness of 1/8 inch and cut into circles using a cookie cutter or a glass.
  5. Place a spoonful of the potato-cheese filling onto each dough circle and fold in half, pressing the edges to seal.
  6. Bring a pot of salted water to a boil. Add the varenyky and cook for 5-7 minutes or until they float to the surface.
  7. Drain the varenyky and toss with butter. Serve hot.
