Brazilian Chicken Croquettes Recipe
Brazilian Chicken Croquettes has a crispy exterior and a savory, creamy filling.
Ingredients:
- 2 cups shredded cooked chicken
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 2 tbsp butter
- 2 cups all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- Salt and pepper, to taste
- Oil, for frying
Instructions:
- In a saucepan, sauté the onion and garlic in butter until translucent.
- Add the shredded chicken to the pan and cook until heated through.
- Pour in the chicken broth and simmer until most of the liquid has evaporated.
- Season the chicken mixture with salt and pepper to taste, then remove from heat and let it cool.
- Take a small portion of the chicken mixture and shape it into a teardrop or drumstick shape.
- Roll the shaped chicken mixture in flour, then dip it in beaten eggs, and finally coat it with breadcrumbs.
- Heat oil in a deep fryer or large skillet to 350°F (175°C).
- Fry the Coxinha in batches until golden brown and crispy, about 5-7 minutes.
- Remove from oil and drain on paper towels.
