Cauliflower Tacos Recipe

Ingredients:

  • 1 head of cauliflower, chopped into small florets
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 8 corn tortillas
  • 1 avocado, sliced
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • Lime wedges for serving

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cauliflower florets with the olive oil, smoked paprika, chili powder, cumin, salt, and pepper in a mixing bowl.
  3. Spread the cauliflower mixture out on a baking sheet lined with parchment paper.
  4. Roast the cauliflower in the preheated oven for 20-25 minutes or until tender and lightly browned.
  5. Warm the corn tortillas in a pan or in the oven.
  6. Fill each tortilla with a scoop of the roasted cauliflower mixture, sliced avocado, chopped red onion, and chopped cilantro.
  7. Serve with lime wedges on the side.
