Cauliflower Tacos Recipe

Ingredients:
- 1 head of cauliflower, chopped into small florets
- 2 tbsp olive oil
- 1 tbsp smoked paprika
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 8 corn tortillas
- 1 avocado, sliced
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- Lime wedges for serving
Instructions:
- Preheat your oven to 400°F (200°C).
- Toss the cauliflower florets with the olive oil, smoked paprika, chili powder, cumin, salt, and pepper in a mixing bowl.
- Spread the cauliflower mixture out on a baking sheet lined with parchment paper.
- Roast the cauliflower in the preheated oven for 20-25 minutes or until tender and lightly browned.
- Warm the corn tortillas in a pan or in the oven.
- Fill each tortilla with a scoop of the roasted cauliflower mixture, sliced avocado, chopped red onion, and chopped cilantro.
- Serve with lime wedges on the side.
