Ingredients:

  • 1 pound fresh white fish fillets or shrimp, diced
  • 1 red onion, thinly sliced

  2. Squeeze the juice of the lemons and limes over the mixture, ensuring the seafood is fully covered in the citrus juices.
  3. Season with salt and pepper to taste. Mix well to combine all the ingredients.
  4. Cover the bowl and refrigerate for at least 30 minutes, allowing the flavors to meld and the seafood to “cook” in the citrus juices.
  5. Serve the Chilean ceviche chilled as an appetizer or light main dish. Garnish with additional cilantro, if desired.
