Ingredients:

  • 4 large egg whites, at room temperature
  • 1 cup granulated sugar
  • 1 teaspoon white vinegar
  • 1 teaspoon cornstarch
  • 1 teaspoon vanilla extract
  • Whipped cream, for topping
  • Assorted fresh fruits (such as berries, kiwi, and passion fruit), for garnish

Instructions:

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a clean mixing bowl, beat the egg whites on high speed until soft peaks form.
  3. Gradually add the sugar, one tablespoon at a time, while continuing to beat the egg whites. Beat until the mixture is thick, glossy, and the sugar has completely dissolved.
  4. Reduce the speed to low and add the vinegar, cornstarch, and vanilla extract. Mix until well combined.
  5. Spoon the meringue mixture onto the prepared baking sheet, shaping it into a round or oval shape with slightly raised edges.
  6. Place the baking sheet in the preheated oven and immediately reduce the temperature to 250°F (120°C). Bake for approximately 1 hour and 15 minutes, or until the pavlova is crisp on the outside and slightly soft on the inside.
  7. Turn off the oven and leave the pavlova inside to cool completely.
  8. Once the pavlova has cooled, carefully transfer it to a serving platter or plate.
  9. Top the pavlova with a generous amount of whipped cream, spreading it evenly.
  10. Decorate with an assortment of fresh fruits, arranging them attractively on top of the cream.
  11. Serve the Kiwi Pavlova immediately, slicing it into individual portions and savoring the delightful combination of textures and flavors.
