Crispy and Savory Eggplant Recipe

  • 2 medium-sized eggplants, sliced into bite-sized pieces
  • 1/4 cup cornstarch
  • 1/4 cup vegetable oil
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1 tbsp. rice vinegar
  • 2 tbsp. brown sugar
  • 1 tsp. sesame oil
  • 1/4 cup chopped green onions
  • Sesame seeds (for garnish)


  1. In a large bowl, toss the eggplant pieces with cornstarch until evenly coated.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the eggplant pieces and cook for 2-3 minutes on each side, or until golden brown and crispy. Remove from skillet and set aside on a paper towel-lined plate to drain any excess oil.
  3. In the same skillet, add the garlic and sauté for 1-2 minutes, or until fragrant.
  4. In a small bowl, whisk together the soy sauce, rice vinegar, brown sugar, and sesame oil.
  5. Add the sauce to the skillet and cook for 1-2 minutes, or until thickened.
