Ingredients:
- 2 cups of all-purpose flour
- 1/2 cup of sugar
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 1/2 teaspoon of ground cinnamon
- 1 egg
- 1/2 cup of milk
- 1/2 cup of unsalted butter, melted
- 1 teaspoon of vanilla extract
- 1 large apple, peeled and diced into small pieces
Instructions:
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease with cooking spray.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
- In a separate bowl, beat the egg lightly with a fork. Add the milk, melted butter, and vanilla extract, and whisk together until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Fold in the diced apple pieces.
- Spoon the batter into the muffin cups, filling each one about 3/4 full.
- Bake the muffins for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
