Kofta Curry Recipe

Ingredients:

For the kofta:
  • 1 pound ground beef or lamb
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper, to taste
  • Skewers (if grilling)
For the curry sauce:
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cardamom
  • 1 cup beef or vegetable broth
  • 2 tablespoons vegetable oil
  • Chopped fresh cilantro, for garnish

Instructions:

  1. In a bowl, mix together the ground meat, finely chopped onion, minced garlic, ground cumin, ground coriander, salt, and pepper. Knead the mixture until well combined.
  2. If grilling, shape the meat mixture onto skewers. If not, shape the mixture into small oblong patties.
  3. Heat a grill or skillet over medium-high heat. Grill or cook the kofta until they’re browned and cooked through. Set aside.
  4. In a separate pot, heat the vegetable oil over medium heat. Sauté the finely chopped onion and minced garlic until they’re softened and aromatic.
  5. Add the chopped tomatoes and cook until they start to break down.
  6. Stir in the ground turmeric, paprika, ground cinnamon, ground ginger, ground cloves, and ground cardamom. Cook for a few minutes to release the spices’ flavors.
  7. Pour in the beef or vegetable broth and let the sauce simmer for about 15-20 minutes, until it thickens and develops a rich aroma.
  8. Place the cooked kofta into the curry sauce and let them simmer together for an additional 5 minutes.
  9. Remove the pot from heat and garnish the Kofta Curry with chopped fresh cilantro.
  10. Serve the Sudanese Kofta Curry hot, accompanied by rice or flatbread.
