Plantain Soup Recipe
Plantain Soup recipe – Bursting with hearty vegetables and aromatic spices, this comforting soup is perfect for warming up on chilly evenings or serving as a satisfying meal any time of day
Ingredients:
- 2 ripe plantains, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 tomatoes, diced
- 1 carrot, diced
- 1 celery stalk, diced
- 6 cups vegetable or chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons chopped cilantro, for garnish
- Lime wedges, for serving
Instructions:
- In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and translucent.
- Add the diced bell pepper, tomatoes, carrot, and celery to the pot. Cook for a few minutes until the vegetables start to soften.
- Stir in the diced plantains and cook for another 2-3 minutes.
- Pour in the vegetable or chicken broth, and add the ground cumin, dried oregano, bay leaf, salt, and pepper. Bring the soup to a simmer.
- Reduce the heat to low and let the soup simmer gently for about 20-25 minutes, or until the plantains are tender and the flavors have melded together.
- Once the soup is ready, remove the bay leaf from the pot. Taste and adjust the seasoning if needed.
- Ladle the hot soup into bowls and garnish with chopped cilantro. Serve with lime wedges on the side for squeezing over the soup before eating.
