Plantain Soup Recipe

Plantain Soup recipe – Bursting with hearty vegetables and aromatic spices, this comforting soup is perfect for warming up on chilly evenings or serving as a satisfying meal any time of day

Ingredients:

  • 2 ripe plantains, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tomatoes, diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 6 cups vegetable or chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons chopped cilantro, for garnish
  • Lime wedges, for serving

Instructions:

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and translucent.
  2. Add the diced bell pepper, tomatoes, carrot, and celery to the pot. Cook for a few minutes until the vegetables start to soften.
  3. Stir in the diced plantains and cook for another 2-3 minutes.
  4. Pour in the vegetable or chicken broth, and add the ground cumin, dried oregano, bay leaf, salt, and pepper. Bring the soup to a simmer.
  5. Reduce the heat to low and let the soup simmer gently for about 20-25 minutes, or until the plantains are tender and the flavors have melded together.
  6. Once the soup is ready, remove the bay leaf from the pot. Taste and adjust the seasoning if needed.
  7. Ladle the hot soup into bowls and garnish with chopped cilantro. Serve with lime wedges on the side for squeezing over the soup before eating.
