Potato Soup Recipe

Ingredients:

  • 4 slices of bacon, chopped
  • 1 large onion, chopped
  • 4 cloves of garlic, minced
  • 6 cups of chicken or vegetable broth
  • 2 pounds of potatoes, peeled and chopped
  • 2 bay leaves
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste
  • 1/2 cup of heavy cream
  • Chopped fresh parsley for garnish

Instructions:

  1. In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set it aside, leaving the bacon grease in the pot.
  2. Add the onion and garlic to the pot and sauté until the onion is translucent, about 5 minutes.
  3. Add the broth, potatoes, bay leaves, thyme, and rosemary to the pot. Bring the mixture to a boil, then reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
  4. Remove the bay leaves from the pot and discard them.
  5. Using an immersion blender or a regular blender, puree the soup until smooth.
  6. Stir in the heavy cream and season the soup with salt and pepper to taste.
  7. Ladle the soup into bowls and sprinkle the chopped bacon and parsley over the top.
  8. Serve the soup hot and enjoy!
