Spicy Sausage and Grits Casserole Recipe

Ingredients:

  • 1 cup quick-cooking grits
  • 2 cups water
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 pound spicy sausage, casings removed
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 2 cloves garlic, minced
  • 2 cups shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 3 eggs, beaten

Instructions:

  1. Preheat your oven to 350 degrees F and grease a 9×13 inch baking dish.
  2. In a large saucepan, bring the water and milk to a boil. Add the salt, black pepper, and cayenne pepper.
  3. Slowly whisk in the grits, stirring constantly to prevent lumps. Cook for 5-7 minutes or until thickened, stirring occasionally.
  4. In a large skillet, cook the sausage over medium heat until browned and cooked through. Drain any excess grease.
  5. Add the onion, bell pepper, and garlic to the skillet with the sausage and cook for 5 minutes or until the vegetables are tender.
  6. Stir the sausage mixture and shredded cheddar cheese into the cooked grits until well combined.
  7. Pour the mixture into the prepared baking dish.
  8. In a small bowl, whisk together the Parmesan cheese and beaten eggs. Pour the egg mixture over the grits mixture.
  9. Bake for 35-40 minutes or until golden brown and set.
