Suya-Spiced Grilled Chicken

Suya-Spiced Grilled Chicken, a dish that encapsulates the bold and aromatic essence of West African cuisine. Imagine succulent chicken pieces marinated in a vibrant blend of spices, skewered, and expertly grilled to perfection. 

Ingredients:

  • 2 pounds chicken pieces (drumsticks, thighs, or wings)
  • 1/2 cup roasted peanuts, ground
  • 2 tablespoons ground cayenne pepper
  • 2 tablespoons paprika
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon ginger powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt to taste
  • Vegetable oil for brushing
  • Suya spice for serving (optional)

Instructions:

  1. Prepare the Suya Spice Marinade:
    1. In a bowl, combine ground roasted peanuts, cayenne pepper, paprika, onion powder, garlic powder, ginger powder, smoked paprika, dried thyme, and salt. Mix well to create the suya spice blend.
  2. Marinate the Chicken:
    1. Rub the chicken pieces generously with the suya spice mixture, ensuring they are well coated. Allow the chicken to marinate for at least 2 hours or preferably overnight in the refrigerator.
  3. Preheat the Grill:
    1. Preheat your grill to medium-high heat.
  4. Grill the Chicken to Perfection:
    1. Thread the marinated chicken pieces onto skewers. Grill the chicken for 15-20 minutes, turning occasionally, until they are fully cooked and have a beautiful char.
  5. Brush with Vegetable Oil:
    1. During the last few minutes of grilling, brush the chicken with vegetable oil to enhance the juiciness and add a glossy finish.
  6. Serve with Suya Spice:
    1. Optionally, sprinkle additional suya spice over the grilled chicken before serving for an extra burst of flavor.
