  • 500g boneless, skinless chicken thighs, thinly sliced
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 2 Thai bird’s eye chilies, finely chopped (adjust to taste)
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup fresh basil leaves, loosely packed
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • Cooked rice, for serving


  1. Heat vegetable oil in a wok or large skillet over high heat. Add minced garlic and chopped Thai chilies, and stir-fry for 30 seconds until fragrant.
  2. Add thinly sliced chicken thighs to the wok and stir-fry for 3-4 minutes until cooked through and lightly browned.
  3. Toss in sliced onion, red bell pepper, and green bell pepper. Stir-fry for an additional 2-3 minutes until the vegetables are tender-crisp.
  4. In a small bowl, mix together soy sauce, oyster sauce, fish sauce, and sugar. Pour the sauce over the chicken and vegetables in the wok.
  5. Add fresh basil leaves to the stir-fry and toss everything together until the basil wilts and the ingredients are evenly coated in the sauce.
