Spicy Tofu and Vegetable Stir Fry Recipe

Ingredients:
- 1 block of firm tofu, drained and cut into small cubes
- 2 tbsp. vegetable oil
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup sliced mushrooms
- 1/2 cup sliced carrots
- 1/4 cup soy sauce
- 2 tbsp. hoisin sauce
- 1 tbsp. sriracha sauce
- 1 tbsp. cornstarch
- Green onions, chopped (for garnish)
Instructions:
- In a small bowl, whisk together the soy sauce, hoisin sauce, sriracha sauce, and cornstarch.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the onion and garlic and sauté for 2-3 minutes, or until fragrant.
- Add the tofu and continue cooking for another 2-3 minutes, until lightly browned.
- Add the bell pepper, mushrooms, and carrots and cook for an additional 2-3 minutes.
- Pour the sauce over the tofu and vegetables and stir until well combined.
- Cook for another 1-2 minutes, or until the sauce has thickened and the vegetables are tender.
- Garnish with chopped green onions and serve hot.
