Spicy Tofu and Vegetable Stir Fry Recipe

Ingredients:

  • 1 block of firm tofu, drained and cut into small cubes
  • 2 tbsp. vegetable oil
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup sliced mushrooms
  • 1/2 cup sliced carrots
  • 1/4 cup soy sauce
  • 2 tbsp. hoisin sauce
  • 1 tbsp. sriracha sauce
  • 1 tbsp. cornstarch
  • Green onions, chopped (for garnish)

Instructions:

  1. In a small bowl, whisk together the soy sauce, hoisin sauce, sriracha sauce, and cornstarch.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the onion and garlic and sauté for 2-3 minutes, or until fragrant.
  4. Add the tofu and continue cooking for another 2-3 minutes, until lightly browned.
  5. Add the bell pepper, mushrooms, and carrots and cook for an additional 2-3 minutes.
  6. Pour the sauce over the tofu and vegetables and stir until well combined.
  7. Cook for another 1-2 minutes, or until the sauce has thickened and the vegetables are tender.
  8. Garnish with chopped green onions and serve hot.
