Authentic Vietnamese Pho Recipe

Ingredients:

  • 2 pounds beef bones
  • 1 large onion, peeled and halved
  • 4-inch piece of ginger, peeled and halved lengthwise
  • 2 cinnamon sticks
  • 3 star anise
  • 4 whole cloves
  • 1 tablespoon coriander seeds
  • 1 tablespoon fennel seeds
  • 1 teaspoon black peppercorns
  • 4 quarts water
  • 1/4 cup fish sauce
  • 1 tablespoon sugar
  • 1 pound rice noodles
  • 1/2 pound beef sirloin, sliced thinly
  • 1/2 cup cilantro leaves
  • 1/2 cup sliced green onions
  • 1/2 cup bean sprouts
  • 1/2 cup Thai basil leaves
  • 1 lime, cut into wedges

Instructions:

  1. Preheat the oven to 450 degrees F. Place the beef bones, onion, and ginger on a baking sheet and roast in the oven for 20 minutes.
  2. In a large pot, add the cinnamon sticks, star anise, cloves, coriander seeds, fennel seeds, and peppercorns. Toast the spices over medium heat for 2-3 minutes, until fragrant.
  3. Add the roasted beef bones, onion, and ginger to the pot along with the water. Bring to a boil, then reduce the heat to low and simmer for 4-6 hours, skimming any impurities that rise to the surface.
  4. Strain the broth through a fine-mesh strainer and return it to the pot. Add the fish sauce and sugar and simmer for another 10 minutes.
  5. Prepare the rice noodles according to the package instructions.
  6. Divide the cooked noodles into four bowls and top with the sliced beef sirloin.
  7. Ladle the hot broth over the beef and noodles, and top with cilantro, green onions, bean sprouts, and Thai basil leaves.
  8. Serve with lime wedges on the side.
