Mexican Shrimp Ceviche Recipe

  • 1 pound of cooked shrimp, peeled and deveined
  • 1 cup of diced tomatoes
  • 1/2 cup of diced red onions
  • 1/4 cup of chopped fresh cilantro
  • 1 jalapeno pepper, seeded and minced
  • 1/4 cup of fresh lime juice
  • 2 tablespoons of olive oil
  • Salt and pepper to taste


  1. In a large bowl, combine the cooked shrimp, diced tomatoes, diced red onions, chopped cilantro, and minced jalapeno pepper.
